Creamy Potato Carrot Soup is a comforting, healthy, and easy-to-make dish loaded with tender potatoes, sweet carrots, and aromatic spices. This soup is smooth, hearty, and perfect for meal prep, cozy dinners, or chilly days. A vegetarian-friendly option that freezes well and is full of flavor.
Ingredients
2 tablespoons olive oil or butter
1 medium onion, chopped
2 cloves garlic, minced
3 large carrots, sliced
3 large potatoes, peeled and diced
4 cups vegetable broth
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Heat olive oil or butter in a large soup pot over medium heat. Add chopped onions and garlic. Sauté until translucent and fragrant.
2. Add sliced carrots and diced potatoes. Stir to combine with the onion and garlic mixture.
3. Pour in the vegetable broth, just enough to cover the vegetables. Bring to a boil.
4. Reduce heat and simmer uncovered for 20–25 minutes until carrots and potatoes are fork-tender.
5. Use an immersion blender directly in the pot to blend until smooth, or transfer in batches to a countertop blender.
6. Season with salt and black pepper to taste.
7. Serve hot, garnished with chopped parsley or a swirl of cream if desired.
Notes
For extra creaminess, add a splash of heavy cream or coconut milk at the end of blending.
Sweet potatoes can be used in place of white potatoes for a different flavor profile.
To make it spicier, stir in a pinch of cayenne or smoked paprika before blending.
