Ingredients

1 pound gnocchi

1 cup pumpkin puree

3⁄4 cup heavy cream

1⁄2 cup grated parmesan cheese

2 cloves garlic, minced

3 tablespoons butter

10 fresh sage leaves

1⁄2 teaspoon salt

1⁄4 teaspoon black pepper

1⁄4 teaspoon red pepper flakes (optional)


Instructions

1. Melt butter in a large non-stick skillet over medium heat. Add sage leaves and cook until crispy, about 2 minutes. Remove and set aside.

2. In the same skillet, add minced garlic. Sauté for 30 seconds until fragrant.

3. Stir in pumpkin puree and heavy cream. Simmer on low for 3 to 5 minutes to let the flavors meld.

4. Add grated parmesan cheese and stir until fully melted. Season with salt, black pepper, and red pepper flakes if using.

5. Cook gnocchi according to package directions (boil until they float), or pan-fry in butter until golden and crispy.

6. Toss the cooked gnocchi into the sauce, stirring to coat each piece evenly.

7. Serve hot, topped with crispy sage leaves and extra parmesan.

Notes

For extra texture, try pan-searing the gnocchi until golden before tossing in the sauce.

Always grate fresh parmesan to help it melt smoothly into the sauce.

If reheating, add a splash of cream or milk to loosen the sauce and avoid separation.
