Description

Creamy Sausage and Peppers Pasta is a comforting, one-skillet dinner loaded with Italian sausage, bell peppers, rigatoni, and a rich Parmesan cream sauce. This quick pasta recipe is perfect for weeknights and full of bold flavor. Easy to customize and family-approved!


Ingredients

12 oz Italian sausage

12 oz rigatoni pasta

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 green bell pepper, chopped

1 medium yellow onion, diced

1 cup heavy cream

¾ cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon Italian seasoning

1 tablespoon olive oil

½ teaspoon salt (or to taste)

¼ teaspoon black pepper (or to taste)

Chopped parsley and extra Parmesan for garnish (optional)


Instructions

1. In a large skillet over medium-high heat, cook the Italian sausage until browned and fully cooked. Break it apart as it cooks. Remove and set aside.

2. In the same skillet, heat olive oil. Add the chopped onions and bell peppers. Sauté for 5–7 minutes until softened. Stir in the minced garlic and cook for 1 more minute.

3. Lower the heat to medium. Pour in heavy cream, then add Italian seasoning, salt, and pepper. Simmer for 2–3 minutes.

4. Stir in the Parmesan cheese until melted and smooth.

5. Return the cooked sausage to the skillet. Mix well.

6. Cook the rigatoni pasta according to package instructions. Drain and add to the skillet with the sauce and sausage. Toss to combine.

7. Serve immediately, topped with extra Parmesan and fresh parsley if desired.

Notes

Chop all vegetables before starting so you can cook quickly without overcooking anything.

Use freshly grated Parmesan for the smoothest, creamiest sauce texture.

If reheating leftovers, add a splash of cream or milk to loosen the sauce and restore creaminess.
