Ingredients
1.5 lbs boneless skinless chicken breasts or thighs
2 tablespoons olive oil
4 cloves garlic minced
1 small onion finely chopped
1 cup heavy cream
1 cup chicken broth
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt to taste
Black pepper to taste
2 tablespoons chopped fresh parsley
4 cups cooked white rice
Instructions
1. Season diced chicken with salt, pepper, and paprika.
2. Heat olive oil in a skillet over medium-high. Sear chicken until golden brown and cooked through. Remove and set aside.
3. Lower heat to medium. Add chopped onion and minced garlic to the skillet. Sauté until fragrant and soft.
4. Pour in chicken broth and scrape up brown bits. Let it simmer for a minute.
5. Add heavy cream and Italian seasoning. Stir and simmer until sauce thickens slightly.
6. Return seared chicken to the skillet. Simmer together for 8-10 minutes.
7. Spoon creamy chicken mixture over cooked rice.
8. Garnish with chopped parsley and serve warm.
Notes
If using chicken thighs, trim excess fat for an even cook and rich flavor.
Always sauté garlic on medium heat to avoid bitterness.
