Description

Creamy Spinach Mushroom Shrimp Shells is a quick, comforting pasta dish packed with succulent shrimp, fresh spinach, and savory mushrooms in a garlic parmesan cream sauce. Perfect for weeknight dinners or elegant gatherings, this creamy shrimp pasta is a family favorite that’s both easy and impressive.


Ingredients

12 oz large pasta shells

1 lb shrimp, peeled and deveined

3 cups fresh spinach

2 cups mushrooms, sliced

1 cup heavy cream

3 cloves garlic, minced

3 tbsp butter

1/2 cup parmesan cheese, grated

Salt, to taste

Black pepper, to taste

2 tbsp olive oil


Instructions

1. Bring a large pot of salted water to a boil. Cook the pasta shells until al dente. Drain and set aside.

2. In a large skillet, heat olive oil and 1 tbsp butter over medium heat. Sauté mushrooms until golden and tender, about 5-7 minutes. Season with salt. Remove and set aside.

3. In the same skillet, melt 1 tbsp butter and cook shrimp 2-3 minutes per side until pink. Remove and set aside.

4. Add spinach to the skillet and cook until wilted, about 1-2 minutes. Remove excess moisture.

5. Reduce heat to low. Pour in heavy cream and stir in garlic, 1 tbsp butter, and parmesan. Simmer for 3-5 minutes, stirring often until thickened.

6. Return shrimp, mushrooms, and spinach to the pan. Add cooked pasta shells. Gently toss to coat everything evenly in the sauce. Season with salt and pepper.

7. Serve hot, garnished with more parmesan, black pepper, and optional chopped parsley.

Notes

Don’t overcook the shrimp—once they curl and turn pink, they’re done.

Use freshly grated parmesan for better melting and a richer flavor.

If sauce thickens too much, add a splash of reserved pasta water or cream when reheating.
