Ingredients

2 large chicken breasts, boneless and skinless

1/2 cup sun-dried tomatoes in oil, drained and chopped

3 cloves garlic, minced

3/4 cup heavy cream

1/2 cup chicken broth

1/3 cup grated parmesan cheese

1 teaspoon Italian seasoning

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Season the chicken breasts with salt and pepper.

2. In a large skillet, heat olive oil over medium heat. Sear chicken for 5–6 minutes per side until golden brown. Remove and set aside.

3. In the same skillet, sauté minced garlic for 30 seconds. Add chopped sun-dried tomatoes and cook for 2–3 minutes.

4. Pour in chicken broth, scraping the pan to deglaze. Add heavy cream and Italian seasoning. Simmer for 3–4 minutes until the sauce begins to thicken.

5. Stir in parmesan cheese until melted and smooth. Return chicken to the pan, spooning sauce over the top. Simmer 5–7 minutes until chicken is cooked through (internal temp 165°F).

6. Serve hot with pasta, rice, or a vegetable side. Enjoy!

Notes

If using chicken thighs, adjust cooking time slightly as they may take a bit longer.

Stir the sauce frequently after adding cream to prevent separation.
