Description

This Creamy Tuscan Garlic Chicken Bites with Sun-Dried Tomato Cajun Alfredo Pasta recipe is the perfect weeknight dinner packed with bold flavor, rich Alfredo sauce, Cajun spices, and sun-dried tomatoes. Ingredients

1 lb chicken breast, cubed

3 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped

1 1/4 cup heavy cream

2 teaspoons Cajun seasoning

1/2 cup Parmesan cheese, grated

2 tablespoons butter

1 tablespoon olive oil

8 oz pasta (rotini or fettuccine)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Heat olive oil and butter in a large skillet over medium-high heat. Season chicken cubes with Cajun seasoning, salt, and pepper. Sear until golden brown. Remove from pan.

2. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 1 minute until fragrant.

3. Pour in heavy cream and stir in Parmesan cheese. Simmer over low heat for 5 minutes, stirring often until slightly thickened.

4. While sauce simmers, cook pasta according to package directions. Drain and set aside.

5. Return cooked chicken to the skillet. Stir to coat in the sauce.

6. Add the cooked pasta and gently combine everything.

7. Garnish with chopped parsley. Serve warm with extra Parmesan or chili flakes if desired.

Notes

Sear the chicken in batches if needed to avoid overcrowding the pan.

Add a splash of pasta water if the sauce is too thick.

For added spice, sprinkle extra Cajun seasoning when serving.
