Description

This Creamy White Chicken Chili recipe is the perfect cozy dinner with tender shredded chicken, creamy white beans, spicy green chiles, and a luscious broth. This easy white chili is rich, comforting, and perfect for weeknight meals or freezer-friendly leftovers. Great for fans of chicken chili, hearty soups, and creamy one-pot dinners.


Ingredients

2 cups shredded chicken

2 cans (15 oz) white beans, drained and rinsed

1 small onion, diced

3 cloves garlic, minced

1 can (4 oz) diced green chiles

1 fresh jalapeño, diced (optional)

3 cups chicken broth

4 oz cream cheese, cubed

1/2 cup sour cream

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon chili powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1 tablespoon lime juice

1/4 cup chopped fresh cilantro

1/2 cup shredded cheese (cheddar, Monterey Jack, or blend)


Instructions

1. In a large Dutch oven or pot, heat oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.

2. Stir in garlic and diced jalapeño; cook for 1 minute until fragrant.

3. Add shredded chicken, white beans, green chiles, cumin, oregano, chili powder, salt, and pepper. Stir to combine.

4. Pour in chicken broth and bring to a gentle simmer.

5. Add cream cheese and stir until melted and smooth. Reduce heat to low.

6. Stir in sour cream until fully incorporated. Simmer uncovered for 15 minutes to allow the flavors to meld and chili to slightly thicken.

7. Stir in lime juice and fresh cilantro. Taste and adjust seasoning if needed.

8. Serve hot topped with shredded cheese, extra jalapeño slices, or tortilla strips.

Notes

For a thicker chili, mash some of the beans before adding or simmer longer uncovered.

Rotisserie chicken is a great time-saver and adds rich flavor.

If freezing, skip the sour cream and stir it in fresh after reheating.
