Description

These Crispy Baked Cauliflower Bites with Garlic Sauce are the perfect oven-roasted veggie snack or appetizer. Flavored with paprika, garlic, and a creamy garlic dipping sauce, this healthy cauliflower recipe is vegetarian, customizable, and full of flavor.


Ingredients

1 medium head cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 tablespoon chopped parsley (optional for garnish)

½ cup mayonnaise or Greek yogurt

2 cloves garlic, minced

1 tablespoon lemon juice

¼ teaspoon salt

1 teaspoon chopped parsley or dill (optional)


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Wash and cut the cauliflower into evenly sized florets.

3. Place cauliflower in a large bowl, drizzle with olive oil, and toss with salt, pepper, paprika, and garlic powder until coated.

4. Spread florets in a single layer on the baking sheet.

5. Roast for 25–30 minutes, flipping halfway through, until golden and crisp.

6. In a bowl, combine mayonnaise or yogurt with minced garlic, lemon juice, salt, and herbs. Stir until smooth.

7. Serve roasted cauliflower warm with garlic sauce on the side or drizzled on top. Garnish with parsley if desired.

Notes

For extra crispiness, avoid overcrowding the pan—use two baking sheets if needed.

Let the garlic sauce chill for 10 minutes before serving for deeper flavor.

Air fryer option: cook at 400°F for 12–15 minutes, shaking halfway through.
