Description

These Crispy Black Bean Tacos are quick, budget-friendly, and deliciously meatless. With a golden crunchy shell and seasoned mashed black bean filling, this easy 30-minute recipe is perfect for weeknight dinners or freezer-friendly meal prep.


Ingredients

1 can (15 oz) black beans, drained and rinsed

1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

8 corn tortillas

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste


Instructions

1. In a mixing bowl, mash the black beans slightly, leaving some whole for texture.

2. Stir in garlic powder, cumin, chili powder, salt, and pepper.

3. Place a spoonful of bean mixture onto half of each tortilla and sprinkle with shredded cheese.

4. Fold the tortillas in half to form tacos.

5. Heat olive oil in a skillet over medium heat.

6. Cook tacos 2–3 minutes per side, until golden and crispy.

7. Serve hot with your favorite toppings like salsa, sour cream, or avocado.

Notes

Warm tortillas slightly before folding to prevent cracking.
