Description

This Crispy Chicken Bites & Blackened Cajun Alfredo with Roasted Corn Twists recipe is a bold and creamy dinner idea packed with Cajun spice, blackened chicken, roasted corn, and cheesy Alfredo pasta. Perfect for a comforting weeknight meal or a weekend indulgence.


Ingredients

2 large chicken breasts, diced into bite-sized pieces

2 tablespoons Cajun seasoning

2 tablespoons olive oil

2 tablespoons butter

12 oz rotini pasta

1 ½ cups heavy cream

1 cup grated Parmesan cheese

3 garlic cloves, minced

1 ½ cups corn kernels (fresh or frozen, roasted)

2 tablespoons fresh parsley, chopped

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Cut chicken into bite-sized cubes and season with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a cast iron skillet and sear chicken until crispy and blackened on the outside, juicy inside. Remove and set aside.

3. In the same skillet, roast corn kernels until lightly charred and sweet. Set aside.

4. Cook rotini pasta in salted water until al dente. Drain, reserving a little pasta water.

5. In a saucepan, melt butter and sauté garlic until fragrant. Add heavy cream and whisk gently. Stir in Parmesan until creamy and smooth. Season with Cajun spice for extra kick.

6. Toss cooked pasta and roasted corn into the Alfredo sauce. Add reserved pasta water if needed to loosen.

7. Plate pasta, top with crispy blackened chicken bites, and garnish with parsley. Serve immediately.

Notes

Make sure the skillet is hot before searing chicken for the best blackened crust.

Reserve a splash of pasta water to adjust sauce consistency.

Always use freshly grated Parmesan for the smoothest Alfredo sauce.
