Description

These Crispy Chicken Quesadillas are the ultimate quick dinner with melty cheese, juicy shredded chicken, and golden toasted tortillas. This easy skillet recipe is perfect for weeknights, game day, or anytime you crave something cheesy and satisfying. Includes tips, variations, and storage options.


Ingredients

1 ½ cups cooked shredded chicken

4 large flour tortillas

2 cups shredded cheddar or Mexican blend cheese

½ red bell pepper, finely chopped

¼ cup red onion, finely diced

2 tablespoons fresh cilantro, chopped

2 tablespoons butter or oil for cooking

1 teaspoon taco seasoning (optional)

1 tablespoon jalapeños or hot sauce (optional)


Instructions

1. In a bowl, mix shredded chicken with taco seasoning or hot sauce if using. Add chopped red bell pepper, red onion, and cilantro. Toss until well combined.

2. Lay one tortilla flat. On half of it, sprinkle cheese, then layer the chicken filling, then top with a little more cheese. Fold the tortilla to form a half-moon.

3. Heat a skillet over medium and melt butter or oil. Place the folded tortilla in the skillet and press lightly with a spatula. Cook for 2–3 minutes per side until golden and crispy.

4. Transfer to a cutting board, rest for 1 minute, then slice into wedges. Serve warm with sour cream, salsa, or guacamole.

Notes

Don’t overfill the quesadillas or they’ll fall apart during cooking.

For a crispier finish, use cast iron instead of non-stick.

Freshly grated cheese melts better than pre-shredded.
