Ingredients
1 1/2 cups cottage cheese (preferably full-fat)
1 large egg
1/4 cup all-purpose flour (plus more as needed)
1/4 cup grated Parmesan cheese
Salt and pepper to taste
1 cup breadcrumbs
1/2 cup all-purpose flour (for dredging)
1 egg, beaten (for coating)
Oil for frying (vegetable or canola)
Fresh parsley, chopped (optional garnish)
Instructions
- In a bowl, mix cottage cheese, egg, 1/4 cup flour, Parmesan, salt, and pepper until combined.
- Form mixture into small cubes or rectangular shapes.
- Chill shapes in the fridge for 30 minutes to firm up.
- Set up breading station: one bowl with flour, one with beaten egg, one with breadcrumbs.
- Dredge each cube in flour, dip in egg, then coat with breadcrumbs. Repeat egg and breadcrumbs for extra crunch.
- Heat oil in a skillet over medium-high heat. Fry cubes 2–3 minutes per side until golden.
- Drain on paper towels and sprinkle with parsley if using.
