Ingredients
4 cod fillets (about 5 oz each)
1/2 cup flour
2 eggs, beaten
1 cup panko breadcrumbs
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
Vegetable or canola oil, for frying
4 brioche buns
4 lettuce leaves
2 tomatoes, sliced
8 pickle slices
1/2 cup dill tartar sauce
Instructions
- Pat cod fillets dry and season with salt, pepper, paprika, and garlic powder.
 - Dredge fillets in flour, dip in beaten eggs, then coat with panko breadcrumbs.
 - Heat oil in skillet over medium-high heat; fry fillets 3-4 minutes per side until golden and crispy.
 - Toast brioche buns lightly.
 - Spread dill tartar sauce on buns, layer cod, lettuce, tomato, and pickles.
 - Top with bun and serve immediately.
