2 pounds Yukon Gold potatoes

Instructions
1. Wash and scrub the potatoes thoroughly, then slice them into 1/8-inch thick rounds using a mandoline or sharp knife.
2. In a small saucepan, melt the butter over low heat. Add minced garlic and cook until fragrant, about 1 minute. Stir in olive oil, salt, and pepper.
3. In a mixing bowl, toss the sliced potatoes with the garlic butter mixture until well coated.
4. In a cast iron skillet, arrange the potato slices in a spiral pattern, slightly overlapping. Sprinkle Parmesan between layers.
5. Cover the skillet with foil and bake in a preheated oven at 400°F (200°C) for 25 minutes.
6. Remove foil, increase oven temperature to 425°F (218°C), and bake another 20–25 minutes until the top is golden and crisp.
