Ingredients
1 lb carrots, peeled and sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian herbs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1/3 cup Panko breadcrumbs
Instructions
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Wash, peel, and trim the carrots. Slice in half lengthwise or cut into sticks of equal size.
3. In a large mixing bowl, toss carrots with olive oil, garlic powder, Italian herbs, salt, and pepper.
4. Add Parmesan and breadcrumbs to the bowl and toss gently to coat evenly.
5. Spread the carrots in a single layer on the prepared baking sheet.
6. Roast for 25–30 minutes, flipping halfway through, until the carrots are tender and golden brown with crispy edges.
7. Serve hot. Sprinkle with more Parmesan or chopped parsley if desired.

Make sure the carrots are evenly cut to promote consistent roasting.
Avoid overcrowding the pan—spread carrots out to get crispy edges.
Use freshly grated Parmesan for best melting and flavor.
