This Crock Pot Beef Stroganoff is a creamy, savory, and comforting slow cooker dinner made with tender beef, mushrooms, sour cream, and a rich sauce. Perfect over noodles or rice, it’s a family-friendly, freezer-friendly meal loaded with flavor.
Ingredients
1 ½ pounds beef stew meat
2 cups sliced mushrooms
1 medium yellow onion, chopped
2 cloves garlic, minced
1 cup beef broth
1 tablespoon Worcestershire sauce
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
Salt and pepper, to taste
12 ounces egg noodles, cooked
Instructions
1. In a large skillet over medium-high heat, sear the stew meat in batches until browned on the edges.
2. Transfer the meat to your slow cooker. Add onions, garlic, mushrooms, beef broth, Worcestershire sauce, and cream of mushroom soup. Stir to combine.
3. Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is fork-tender.
4. About 30 minutes before serving, stir in the sour cream and season with salt and pepper to taste.
5. Meanwhile, cook egg noodles according to package instructions. Drain and set aside.
6. Serve the beef stroganoff over noodles and garnish with parsley or dill, if desired.

Browning the beef adds deep, savory flavor—don’t skip this step.
Stir in sour cream only at the end to prevent curdling.
Use low-sodium broth and soup if you’re watching salt content.
