Description

Crockpot Cheesy Chicken is a comforting, creamy slow cooker dinner loaded with tender chicken, smoked sausage, potatoes, and a cheesy sauce. This easy recipe is perfect for busy weeknights or meal prep, bringing together the best of creamy chicken recipes, crockpot dinners, and cheesy family meals.


Ingredients

2 large chicken breasts, cubed

1 package smoked sausage, sliced

4 gold potatoes, cubed

1 cup shredded cheddar cheese

8 ounces cream cheese, cubed

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped chives or green onions (optional)


Instructions

1. Cut the chicken breasts into bite-sized pieces, slice the smoked sausage, and cube the potatoes.

2. Place chicken, sausage, and potatoes into the crockpot. Sprinkle with garlic powder, onion powder, paprika, salt, and black pepper. Pour in chicken broth.

3. Add cubed cream cheese on top. Cover and cook on low for 6-7 hours or high for 3-4 hours.

4. About 30 minutes before serving, stir in shredded cheddar cheese until melted and combined.

5. Garnish with chopped chives or green onions if desired. Serve hot.

Notes

For extra spice, add ¼ teaspoon cayenne pepper or sliced jalapeños before cooking.

To make ahead, prep all ingredients and refrigerate overnight, then cook the next day.

Stir gently when adding cheese to maintain a creamy sauce.
