5 cups diced russet or Yukon Gold potatoes
2 cups shredded cheddar cheese (divided)
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
4 tablespoons melted butter
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped chives or green onions (optional)
Instructions
- 1. Peel and dice the potatoes into even cubes or slices.
- In a mixing bowl, combine cream of chicken soup, sour cream, melted butter, 1 cup shredded cheddar, garlic powder, onion powder, salt, and pepper.
- Stir until smooth. Add potatoes to a greased slow cooker.
- Pour cheese sauce over potatoes and stir gently to coat.
- Cover and cook on low for 4-5 hours or high for 2-3 hours, until potatoes are tender and sauce is bubbly.
- Sprinkle remaining cheddar cheese on top.
