Ingredients
1 ½ pounds ground beef
2 eggs
¾ cup breadcrumbs
1 packet French onion soup mix
2 tablespoons Worcestershire sauce
1 teaspoon fresh thyme, chopped
1 teaspoon salt
½ teaspoon black pepper
2 large sweet onions, thinly sliced
2 tablespoons butter
6 slices mozzarella or provolone cheese
Instructions
1. In a skillet over medium heat, melt butter and add sliced onions. Cook for 20 minutes until golden and caramelized. Set aside.
2. In a large mixing bowl, combine ground beef, eggs, breadcrumbs, French onion soup mix, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined.
3. Line your slow cooker with foil or parchment. Shape the meat mixture into a loaf and place it inside. Top with half of the caramelized onions.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until internal temperature reaches 160°F.
5. In the last 15 minutes, top with cheese slices and remaining onions. Cover and cook just until the cheese melts.
6. Let rest for 10 minutes before slicing. Spoon extra onions and cheese over each piece and serve.
