Description

This crustless quiche is a satisfying and colorful breakfast option packed with creamy eggs, vibrant spinach, juicy tomatoes, and tangy feta. It’s easy to prepare, naturally gluten-free, and perfect for make-ahead meals.


Ingredients

6 large eggs

1 cup milk (whole or half milk/half cream)

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup onion or shallot, finely chopped (optional)

Salt and pepper to taste

1 tbsp olive oil or butter (for sautéing)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.
  2. Heat olive oil in a skillet over medium heat. Sauté spinach and onion (if using) until wilted. Let cool.
  3. In a mixing bowl, whisk eggs, milk, salt, and pepper.
  4. Spread spinach mixture in the greased dish. Top with feta and cherry tomatoes.
  5. Pour the egg mixture evenly over the vegetables.
  6. Bake for 35–40 minutes until the center is set and the top is golden.
  7. Cool for 5–10 minutes before slicing and serving.
