Ingredients
6 large eggs
1 cup milk (whole or half milk/half cream)
1 cup cherry tomatoes, halved
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup onion or shallot, finely chopped (optional)
Salt and pepper to taste
1 tbsp olive oil or butter (for sautéing)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.
- Heat olive oil in a skillet over medium heat. Sauté spinach and onion (if using) until wilted. Let cool.
- In a mixing bowl, whisk eggs, milk, salt, and pepper.
- Spread spinach mixture in the greased dish. Top with feta and cherry tomatoes.
- Pour the egg mixture evenly over the vegetables.
- Bake for 35–40 minutes until the center is set and the top is golden.
- Cool for 5–10 minutes before slicing and serving.
