Description

Moist, warmly spiced carrot cake in convenient bar form, crowned with creamy tangy frosting and a sprinkle of chopped pecans. Perfect for every season and simple to bake, these bars bring classic flavor with a modern twist.


Ingredients

2 cups freshly grated carrots

1 cup brown sugar

1/2 cup granulated sugar

3 large eggs

1 cup vegetable oil

2 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1 1/2 tsp ground cinnamon

1/4 tsp nutmeg

1/2 tsp salt

1 1/2 tsp vanilla extract

8 oz cream cheese, softened

1/2 cup butter, softened

2 cups powdered sugar

1/2 tsp vanilla extract (for frosting)

1/2 cup chopped pecans (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish.
  2. In a large bowl, whisk together brown sugar, granulated sugar, eggs, oil, and vanilla.
  3. In another bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Fold in grated carrots.
  6. Pour batter into the baking dish. Bake for 28-32 minutes. Cool completely.
  7. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then vanilla.
  8. Spread frosting over cooled bars. Top with chopped pecans if using.
