Description

This delicious teriyaki chicken stir-fry recipe with colorful veggies and wild rice is a fast, healthy, and flavorful dinner idea. Featuring tender chicken, crisp bell peppers, snap peas, and broccoli tossed in sweet-savory teriyaki sauce over nutty wild rice, it’s perfect for meal prep or busy weeknights.


Ingredients

300 g chicken breast or thighs

1/2 cup teriyaki sauce

2 cups cooked wild rice

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas

1 cup broccoli florets

1 carrot, julienned

2 green onions, chopped

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 teaspoon sesame oil (optional)

1 tablespoon vegetable oil (for cooking)


Instructions

1. Chop the chicken into bite-sized pieces; slice bell peppers, broccoli, and carrots; mince garlic and ginger. Cook wild rice as per package instructions.

2. Heat oil in a skillet or wok over medium-high. Sear chicken until golden and cooked through, about 6-8 minutes. Remove and set aside.

3. In the same pan, sauté garlic and ginger for 30 seconds. Add bell peppers, snap peas, broccoli, and carrots. Stir-fry 3-4 minutes until crisp-tender.

4. Return chicken to the pan. Pour in teriyaki sauce, toss, and simmer 2-3 minutes until glazed.

5. Serve over wild rice, topped with green onions and a drizzle of sesame oil if desired.

Notes

For a vegetarian version, swap chicken for tofu or tempeh (pressed and pan-fried).

You can substitute wild rice with jasmine, basmati, or even noodles.
