Perfect for weeknights or meal prep, this pickle-brined chicken recipe is easy to make and incredibly satisfying. Ideal for those who love bold flavors, crispy texture, and comforting meals with a twist.
Ingredients
2 boneless skinless chicken breasts
1 cup dill pickle juice (for marinade)
1/2 cup chopped dill pickles
1/2 cup finely grated parmesan cheese
3/4 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon dried dill or 1 tablespoon fresh dill
2 eggs, beaten
1/2 cup all-purpose flour
1/4 cup mayonnaise (for sauce)
1/4 cup sour cream (for sauce)
2 tablespoons lemon juice
Instructions
1. Place chicken breasts in a bag or shallow bowl with dill pickle juice. Marinate for 30 minutes to 2 hours.
2. Set up three bowls: one with flour, one with beaten eggs, and one with panko, parmesan, garlic powder, and dill.
3. Pat the chicken dry. Dredge in flour, then egg, and coat with breadcrumb-parmesan mixture.
4. Arrange chicken on a wire rack over a baking sheet. Bake at 400°F (200°C) for 20–25 minutes or air fry at 375°F for 15 minutes, flipping once.
5. While baking, mix mayonnaise, sour cream, chopped pickles, lemon juice, and dill to make the sauce.
6. Drizzle creamy dill sauce over cooked chicken. Garnish with extra pickles and fresh dill. Serve immediately.
Notes
Let the chicken rest 5 minutes before slicing to lock in juices.
Use a wire rack while baking to ensure crispiness on all sides.
For extra tang, add a splash of pickle juice to the creamy sauce.
