Description

These Easy and Delicious Corn Fritters are crispy, golden bites of comfort made with sweet corn, simple pantry staples, and your choice of fresh, frozen, or canned kernels. Perfect for any meal or snack occasion.


Ingredients

Corn kernels (fresh, frozen, or canned)

All-purpose flour

Baking powder

Eggs

Milk

Green onions

Shredded cheese (optional)

Salt and pepper

Neutral oil (like canola or vegetable) for frying


Instructions

  1. If using frozen corn, thaw and pat dry. Drain canned corn well.
  2. In a bowl, whisk flour, baking powder, salt, and pepper.
  3. In another bowl, beat eggs and mix with milk, green onions, and cheese (if using).
  4. Stir corn into the wet mix, then fold in the dry ingredients until just combined.
  5. Heat oil in a skillet over medium heat.
  6. Drop spoonfuls of batter into skillet, flatten slightly, and cook 2–3 minutes per side.
  7. Transfer to paper towel-lined plate. Serve warm.
