Description

This Easy Baked Potato Chicken and Broccoli Casserole is a creamy, cheesy, comforting classic perfect for busy weeknights or family dinners. With golden roasted potatoes, juicy chicken, tender broccoli, and a savory sauce all baked under a bubbling cheese topping, this dish is both hearty and satisfying.


Ingredients

2 large russet potatoes, peeled and diced

2 cups cooked and shredded chicken breast

2 cups fresh broccoli florets (lightly steamed)

1 small red onion, finely chopped (optional)

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 cup sour cream

1/2 cup mayonnaise

1 can (10.5 oz) cream of chicken soup

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil (for roasting potatoes)

Cooking spray (for greasing baking dish)


Instructions

  1. Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, and pepper. Roast on a baking sheet for 20–25 minutes until golden.
  2. Steam broccoli florets for 3–5 minutes until just tender. Set aside.
  3. In a large bowl, mix cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper.
  4. Add cooked chicken, broccoli, roasted potatoes, and chopped red onion to the bowl. Fold to combine.
  5. Lightly grease a 9×13 inch baking dish and pour in the mixture. Spread evenly.
  6. Top with shredded cheddar and mozzarella cheese.
  7. Bake at 375°F (190°C) for 25–30 minutes until cheese is bubbly and golden.
  8. Let rest for 5 minutes before serving.
