Ingredients
2 medium sweet potatoes
1 teaspoon olive oil (optional)
1/4 teaspoon salt
1 tablespoon butter
1 tablespoon chopped chives (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes thoroughly under water and dry them.
2. Use a fork or skewer to pierce each sweet potato 4-5 times around the surface.
3. (Optional) Rub the sweet potatoes with olive oil and sprinkle lightly with salt for a crisper skin.
4. Place the potatoes directly on a baking sheet or a wire rack set over a baking sheet.
5. Bake for 45–60 minutes, depending on size, until a fork easily pierces the center.
6. Remove from oven and allow to cool for a few minutes.
7. Slice each potato open, fluff the inside with a fork, add butter and garnish with chives or toppings of your choice.
Notes
For even crispier skin, place the sweet potatoes on a wire rack to allow heat circulation.
If using larger sweet potatoes, increase baking time to up to 75 minutes.
Sweet potatoes can be meal-prepped and stored in the fridge up to 4 days or frozen mashed for future use.
