Ingredients
2 boneless, skinless chicken breasts
3 cups diced ripe tomatoes
3 cloves garlic, minced
1/4 cup chopped fresh basil
2 tablespoons balsamic vinegar
3 tablespoons olive oil (plus more for cooking)
1/4 cup freshly grated Parmesan cheese (plus more for garnish)
Salt and black pepper to taste
12 oz spaghetti (or pasta of choice)
Instructions
- Cook the spaghetti in salted water according to package directions. Drain and set aside, reserving 1/2 cup pasta water.
- In a bowl, mix tomatoes, garlic, basil, balsamic vinegar, olive oil, salt, and pepper. Let sit to marinate.
- Season chicken with salt, pepper, and Italian herbs. Cook in a skillet with olive oil over medium heat for 5–6 minutes per side or until fully cooked. Slice into bite-sized pieces.
- Add cooked pasta to the skillet with chicken. Pour in the bruschetta mixture and toss to combine. Use reserved pasta water as needed to loosen the sauce.
- Top with Parmesan cheese and extra basil. Serve warm.
