Description

A light and flavorful pasta dish that brings the essence of bruschetta to a warm, satisfying meal. Grilled chicken, fresh tomatoes, basil, garlic, and Parmesan cheese come together for an easy yet impressive dinner that’s perfect for weeknights or casual entertaining.


Ingredients

2 boneless, skinless chicken breasts

3 cups diced ripe tomatoes

3 cloves garlic, minced

1/4 cup chopped fresh basil

2 tablespoons balsamic vinegar

3 tablespoons olive oil (plus more for cooking)

1/4 cup freshly grated Parmesan cheese (plus more for garnish)

Salt and black pepper to taste

12 oz spaghetti (or pasta of choice)


Instructions

  1. Cook the spaghetti in salted water according to package directions. Drain and set aside, reserving 1/2 cup pasta water.
  2. In a bowl, mix tomatoes, garlic, basil, balsamic vinegar, olive oil, salt, and pepper. Let sit to marinate.
  3. Season chicken with salt, pepper, and Italian herbs. Cook in a skillet with olive oil over medium heat for 5–6 minutes per side or until fully cooked. Slice into bite-sized pieces.
  4. Add cooked pasta to the skillet with chicken. Pour in the bruschetta mixture and toss to combine. Use reserved pasta water as needed to loosen the sauce.
  5. Top with Parmesan cheese and extra basil. Serve warm.
