Ingredients
1.5 pounds boneless, skinless chicken thighs or breasts
2 chipotle peppers in adobo sauce
2 cloves garlic
2 tablespoons olive oil
2 tablespoons lime juice
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Add chipotle peppers, garlic, olive oil, lime juice, cumin, oregano, salt, and pepper to a blender or food processor. Blend until smooth.
2. Place chicken in a bowl or bag. Pour marinade over the chicken and coat thoroughly. Let marinate for at least 30 minutes or overnight.
