Description

This Easy Chipotle Chicken (Copycat) recipe brings smoky, juicy restaurant-style flavor to your kitchen using simple ingredients. It’s the perfect high-protein, low-carb meal prep option for burrito bowls, tacos, or salads. Customize the heat and enjoy bold Mexican-inspired flavor at home.


Ingredients

1.5 pounds boneless, skinless chicken thighs or breasts

2 chipotle peppers in adobo sauce

2 cloves garlic

2 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Add chipotle peppers, garlic, olive oil, lime juice, cumin, oregano, salt, and pepper to a blender or food processor. Blend until smooth.

2. Place chicken in a bowl or bag. Pour marinade over the chicken and coat thoroughly. Let marinate for at least 30 minutes or overnight.

3. Heat a cast iron skillet or grill pan over medium-high heat. Cook the chicken 5–6 minutes per side, until nicely seared and cooked through.

4. Use a meat thermometer to ensure internal temperature reaches 165°F.

5. Remove from heat and let chicken rest for 5 minutes before slicing.

6. Serve in bowls, wraps, tacos, or salads. Store leftovers in the fridge up to 4 days.

Notes

For the boldest flavor, marinate the chicken overnight.

Chicken thighs deliver juicier results, but breasts work too.

Always rest the chicken before slicing to retain moisture.
