Ingredients

10 cloves garlic

Instructions

1. In a large saucepan, heat olive oil over medium-low heat. Add peeled garlic cloves and sauté slowly until they are soft and golden. This helps develop a sweet, mellow flavor.

2. Pour in the broth. Add thyme, salt, and pepper. Bring the soup to a gentle simmer and let it cook for 15 minutes to infuse the garlic flavor.

3. Remove the thyme sprigs if using fresh. Blend the soup until smooth using an immersion blender or carefully in batches using a regular blender.

4. In a small bowl, whisk the egg yolks. Temper them by gradually adding a ladle of the hot soup into the yolks while whisking constantly. Then return the yolk mixture into the soup while stirring to create a rich, silky texture.

5. Adjust seasoning to taste. Serve hot with toasted bread cubes or fresh herbs if desired.

Notes

For a dairy twist, you can replace the egg yolks with 1/4 cup of heavy cream.

Roasting the garlic first will add a deeper, sweeter flavor if you have more time.
