Ingredients
1 lb chicken breasts, sliced
12 oz cheese tortellini
1 cup Velveeta cheese, cubed
1 cup mozzarella cheese, shredded
3 cloves garlic, minced
1 cup heavy cream
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt, to taste
Black pepper, to taste
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Season chicken strips with salt, pepper, and Italian seasoning. Sear until golden and cooked through, about 4-5 minutes per side. Set aside.
2. In the same skillet, reduce heat to medium. Add butter and garlic, sauté until fragrant for about 1 minute.
3. Pour in the heavy cream and stir well.
4. Add Velveeta cubes and shredded mozzarella. Stir constantly until the cheese melts into a smooth sauce.
5. Add tortellini directly into the sauce. Simmer for 6-8 minutes, stirring frequently, until pasta is tender.
6. Return cooked chicken to the skillet and mix everything together. Let simmer for another 2-3 minutes.
7. Serve hot, topped with optional parsley or crushed red pepper.
Notes
Use fresh or refrigerated tortellini for quicker cooking and ideal texture.
Stir the sauce continuously while melting cheese to avoid clumping.
Add spinach or mushrooms to make it even heartier without extra prep time.
