Ingredients
2 large cucumbers, thinly sliced
1/2 medium red onion, thinly sliced
2 tablespoons fresh dill, chopped
1/4 cup white vinegar
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sugar (optional)
Instructions
1. Slice the cucumbers and red onion thinly using a mandoline or sharp knife.
2. Optional: Sprinkle sliced cucumbers with salt and let sit in a strainer for 10 minutes. Pat dry to reduce excess water.
3. In a small bowl, whisk together white vinegar, olive oil, salt, pepper, and sugar if using.
4. In a large mixing bowl, combine cucumbers, red onion, and chopped dill.
5. Pour the vinaigrette over the vegetables and gently toss until well coated.
6. Chill in the refrigerator for at least 15 minutes to let flavors blend.
7. Serve cold and enjoy!
Notes
For extra crunch, use Persian or English cucumbers which have fewer seeds and thinner skin.
Letting the cucumbers rest with salt helps keep the salad from turning watery.
This salad gets better with time—prep it a few hours ahead for deeper flavor.
