Ingredients
6 large eggs
2 cups cooked and drained spinach (fresh or frozen)
1 cup crumbled feta cheese
1 cup cottage cheese or ricotta
1 small onion, finely chopped
1 clove garlic, minced (optional)
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
2. Prepare the spinach: thaw frozen spinach and squeeze out excess water, or sauté fresh spinach and chop.
3. In a large bowl, whisk the eggs until smooth.
4. Add feta, cottage cheese or ricotta, spinach, onion, garlic (if using), salt, and pepper to the eggs and mix until combined.
5. Pour the mixture into the prepared baking dish and spread evenly.
6. Bake uncovered for 35–40 minutes until golden on top and the center is set.
7. Cool for 5–10 minutes before slicing and serving.
