Description

These Easy & Flavorful Bang Bang Chicken Skewers are juicy, spicy-sweet grilled bites that are perfect for weeknight dinners, BBQs, or party appetizers. Made with tender marinated chicken and a creamy bang bang sauce, this recipe is bold, quick to cook, and incredibly versatile.


Ingredients

500g chicken thighs or breasts, cubed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon honey

1 teaspoon rice vinegar or lime juice


Instructions

1. In a bowl, mix cubed chicken with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Let it marinate for at least 30 minutes or overnight.

2. In another bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth. Reserve half for serving, the other half for grilling.

3. Thread the marinated chicken onto skewers. If using wooden skewers, soak them in water for 30 minutes first.

4. Preheat a grill or grill pan to medium-high heat. Grill skewers for 10–12 minutes, turning halfway, until cooked through and slightly charred.

5. In the last minutes of cooking, baste skewers with reserved bang bang sauce. Serve hot with extra sauce on the side and optional chopped cilantro.

Notes

For juiciest results, use chicken thighs, but breasts work if you prefer leaner meat.

Adjust the spice level by increasing or reducing the sriracha.

Let the chicken rest a few minutes after grilling to lock in juices.
