Description

This Easy Frozen Meatball Pot Roast is a comforting, family-friendly meal featuring savory gravy, tender vegetables, and juicy meatballs served over creamy mashed potatoes. A quick dinner idea using frozen meatballs, perfect for busy weeknights. Keywords: frozen meatball pot roast, easy comfort food, meatball dinner recipe.

Ingredients

1 bag frozen meatballs (about 32 oz)

3 carrots, chopped

2 celery stalks, sliced

1 yellow onion, diced

2 packets brown gravy mix

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1/2 teaspoon black pepper

Instructions

1. Peel and chop carrots, slice celery, and dice the onion into hearty chunks.

2. In a large skillet or Dutch oven, heat a drizzle of oil and sauté the onion, carrots, and celery for 5–7 minutes until slightly softened.

3. In a bowl, whisk together the brown gravy mix, beef broth, Worcestershire sauce, garlic powder, and black pepper.

4. Pour the gravy mixture into the skillet and stir to combine with the veggies.

5. Add frozen meatballs to the skillet and stir until coated in gravy.

6. Cover and simmer on medium-low heat for 25–30 minutes, stirring occasionally, until the veggies are tender and meatballs heated through.

7. Serve hot over mashed potatoes, rice, or noodles. Garnish with parsley if desired.

Notes

For richer flavor, brown the meatballs briefly before simmering.

If gravy gets too thick, stir in more beef broth while simmering.

Customize with extra veggies like mushrooms or potatoes for added texture.
