Description

These Easy Homemade Popovers in a Muffin Tin are light, golden, and crisp with a custard-like interior—made without a popover pan! Perfect for breakfast or dinner, they come together fast with simple ingredients like eggs, milk, and flour. A no-fail side dish or breakfast treat you’ll bake again and again.

Ingredients

3 large eggs

1 ½ cups whole milk

1 ½ cups all-purpose flour

½ teaspoon salt

2 tablespoons unsalted butter (melted)

Nonstick cooking spray or extra butter (for greasing the muffin tin)

Instructions

1. Place the muffin tin in the oven and preheat to 450°F (232°C).

2. In a large bowl, whisk the eggs and milk until frothy.

3. Add flour and salt to the mixture and whisk until just combined. Some small lumps are fine.

4. Stir in the melted butter.

5. Carefully remove the preheated muffin tin and grease each cup generously with nonstick spray or butter.

6. Fill each cup halfway with batter. Work quickly so the pan stays hot.

7. Bake at 450°F for 15 minutes.

8. Reduce the temperature to 350°F and continue baking for 15-20 minutes until puffed and golden. Do not open the oven during baking.

9. Remove from oven, transfer to a wire rack, and pierce each popover with a knife to release steam.

10. Serve warm and enjoy immediately for best texture.

Notes

Make sure your eggs and milk are at room temperature for the best rise.

Don’t open the oven door while baking—popovers are sensitive to temperature drops.

For savory variations, try adding shredded cheese or fresh herbs to the batter.
