Ingredients
3 medium apples
200 grams all-purpose flour
150 grams granulated sugar
2 large eggs
100 ml milk
100 ml vegetable oil
2 teaspoons baking powder
1 teaspoon vanilla extract
Zest of 1 lemon (optional)
Powdered sugar (for dusting)
Instructions
1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
2. Peel, core, and slice the apples into thin wedges. Toss with lemon juice to prevent browning.
3. In a medium bowl, whisk together eggs, granulated sugar, vanilla, milk, and vegetable oil until frothy.
4. In a large bowl, sift flour and baking powder together. Stir in lemon zest if using.
5. Add wet ingredients into dry ingredients and mix until just combined. Don’t overmix.
6. Gently fold in most of the apple slices, saving a handful for topping.
7. Pour the batter into the prepared pan and arrange reserved apple slices on top.
8. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
9. Let the cake cool for 15 minutes in the pan, then remove the springform ring.
10. Dust with powdered sugar before serving.
Notes
For a richer flavor, use a mix of tart and sweet apples.
Don’t skip the parchment paper—it makes unmolding the cake much easier.
The cake flavor deepens by the next day, so it’s even better when made ahead.
