These Easy Jello Meringue Cookies are light, crisp, and flavored with fruity gelatin. Made with egg whites and sugar, they’re a gluten-free, fat-free dessert that’s as beautiful as it is delicious—perfect for parties, spring treats, and pastel cookie trays.
Ingredients
3 large egg whites
1 cup granulated sugar
1 package (3 oz) flavored gelatin (Jello, any flavor)
1/4 teaspoon cream of tartar (optional)
1 pinch salt
Instructions
1. Preheat oven to 200°F (93°C) and line two baking sheets with parchment paper.
2. In a clean, grease-free bowl, beat the egg whites on medium speed until foamy. Add cream of tartar.
3. Gradually add sugar, one tablespoon at a time, beating on high until glossy stiff peaks form.
4. Gently fold in gelatin powder and salt using a spatula—do not overmix.
5. Transfer mixture to a piping bag with a star tip and pipe 1-inch mounds onto baking sheets.
6. Bake for 1.5 to 2 hours, or until dry to the touch and easily lift off parchment.
7. Turn off oven and let cookies cool inside with the door ajar for 30 minutes.
Notes
Use only clean, dry bowls and beaters—any grease prevents stiff peaks.
Add gelatin after stiff peaks form to retain volume and color vibrancy.
Avoid humid days for best results; meringues love dry air!
