Description

These Easy Lasagna Cups are the perfect bite-sized twist on traditional lasagna. Made in a muffin tin with ground beef, marinara, and melted cheese, they’re quick, customizable, and great for appetizers, meal prep, or weeknight dinners. Ingredients

12 lasagna noodles

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

2 cups marinara sauce

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

1 tablespoon olive oil

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Boil lasagna noodles and cut each in half.

2. Sauté onion and garlic in olive oil, then brown the ground beef.

3. Add marinara sauce and simmer.

4. Spray muffin tin, curl noodle halves into cups.

5. Fill each with meat sauce and top with mozzarella and Parmesan.

6. Bake at 375°F for 15–18 minutes.

7. Let cool slightly, garnish with parsley, and serve.

Notes

Don’t overcook the noodles to keep them easy to shape.

Use freshly grated cheese for best melt and flavor.
