Ingredients
1 lb chicken breast strips
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
1 medium zucchini, sliced
2 tbsp olive oil
2 cloves garlic, minced
1 tsp Italian seasoning
1 tbsp lemon juice
1/4 cup crumbled feta cheese
2 tbsp fresh parsley, chopped
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. In a mixing bowl, combine chicken strips with olive oil, garlic, Italian seasoning, lemon juice, salt, and pepper. Let marinate for 10 minutes.
2. While chicken marinates, slice all vegetables into thin, even strips.
3. Heat a nonstick skillet or wok over medium-high heat. Add chicken and cook for 5–7 minutes, until browned and cooked through. Remove and set aside.
4. In the same pan, stir-fry the bell peppers, onion, and zucchini for about 5 minutes until slightly tender but still crisp.
5. Return the cooked chicken to the skillet. Stir and cook for another 2–3 minutes to combine flavors.
6. Remove from heat, sprinkle with crumbled feta and fresh parsley. Serve hot over rice, quinoa, or pita.
Notes
Pre-slice all ingredients before heating the pan to speed up the cooking process.
