Ingredients
2 large eggs
1 teaspoon butter or olive oil
Pinch salt
Pinch black pepper

Optional: 1 tablespoon shredded cheese, 1 tablespoon chopped spinach, 1 tablespoon diced tomatoes
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease two ramekins with butter or olive oil.
2. Crack one egg into each ramekin, taking care not to break the yolks.
3. Season each with a pinch of salt, pepper, and fresh herbs.
4. Place ramekins on a baking tray and pour hot water into the tray until it reaches halfway up the ramekins.
5. Bake for 12–15 minutes, depending on your preferred yolk texture.
6. Remove from oven carefully using oven mitts. Let cool slightly before serving.
