Ingredients
1.5 pounds boneless skinless chicken breasts
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained (or 1.5 cups frozen corn)
1 can (10 oz) diced tomatoes with green chilies
1 packet ranch seasoning mix
1 packet taco seasoning
1 block (8 oz) cream cheese
1 cup chicken broth
1 cup shredded cheddar cheese (for topping)
1 avocado, diced (for garnish)
2 tablespoons chopped cilantro (for garnish)
Instructions
1. Place the chicken breasts in the bottom of the slow cooker.
2. Sprinkle the ranch seasoning and taco seasoning evenly over the chicken.
3. Add the black beans, corn, and diced tomatoes on top.
4. Pour in the chicken broth and place the block of cream cheese on top.
5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
6. Remove the chicken, shred it using two forks, and return it to the pot.
7. Stir well until the cream cheese is fully incorporated into the sauce.
8. Serve hot, topped with cheddar cheese, avocado, and chopped cilantro.
Notes
Use low-sodium chicken broth and seasonings if watching sodium intake.
Don’t stir before cooking; the layering helps with even flavor distribution.
To make it spicier, add sliced jalapeños or a dash of hot sauce before serving.
