Ingredients
2 cups frozen chopped spinach, thawed and squeezed dry
2 large eggs
1 cup sour cream
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 cup finely chopped onion (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch casserole dish.
2. In a large bowl, whisk together eggs, sour cream, garlic powder, and salt until well combined.
3. Add in the squeezed-dry spinach, shredded cheese, and chopped onion (if using), and mix until fully incorporated.
4. Pour the mixture into the prepared casserole dish and spread it evenly.
5. Bake for 35–40 minutes, or until the top is golden brown and the center is fully set.
6. Let rest for 5 minutes before serving. Enjoy!
Notes
Squeeze the spinach well to avoid a soggy casserole.
Add more cheese on top during the last 5 minutes for an extra golden crust.
