A flavorful Chinese-American favorite, this sweet and sour chicken features crispy fried chicken pieces tossed in a tangy homemade sauce with bell peppers and pineapple. Perfect over a bowl of fluffy white rice.
Ingredients
1 lb boneless, skinless chicken breasts or thighs
1/2 cup cornstarch
2 eggs
Salt and pepper
Vegetable oil
1/2 cup rice vinegar
1/3 cup ketchup
1/4 cup soy sauce
3/4 cup brown sugar
1 tbsp cornstarch + 2 tbsp water
1 cup pineapple chunks
1 red bell pepper
1 yellow bell pepper
2 green onions
Sesame seeds (optional)
Steamed white rice
Instructions
- Season chicken with salt and pepper, coat in egg and cornstarch.
- Fry chicken until golden and crispy, then drain.
- In a saucepan, mix vinegar, ketchup, soy sauce, and sugar. Simmer.
- Stir in cornstarch slurry to thicken the sauce.
- Sauté peppers and pineapple in a skillet.
- Add chicken and sauce; toss to coat.
- Serve over rice with garnish.
