Description

A flavorful Chinese-American favorite, this sweet and sour chicken features crispy fried chicken pieces tossed in a tangy homemade sauce with bell peppers and pineapple. Perfect over a bowl of fluffy white rice.


Ingredients

1 lb boneless, skinless chicken breasts or thighs

1/2 cup cornstarch

2 eggs

Salt and pepper

Vegetable oil

1/2 cup rice vinegar

1/3 cup ketchup

1/4 cup soy sauce

3/4 cup brown sugar

1 tbsp cornstarch + 2 tbsp water

1 cup pineapple chunks

1 red bell pepper

1 yellow bell pepper

2 green onions

Sesame seeds (optional)

Steamed white rice


Instructions

  1. Season chicken with salt and pepper, coat in egg and cornstarch.
  2. Fry chicken until golden and crispy, then drain.
  3. In a saucepan, mix vinegar, ketchup, soy sauce, and sugar. Simmer.
  4. Stir in cornstarch slurry to thicken the sauce.
  5. Sauté peppers and pineapple in a skillet.
  6. Add chicken and sauce; toss to coat.
  7. Serve over rice with garnish.
