Ingredients
1/4 cup turkey drippings or butter
1/4 cup all-purpose flour
2 to 2 1/2 cups turkey or chicken stock
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
1/4 teaspoon onion powder (optional)
1/2 teaspoon dried herbs or 1 teaspoon fresh herbs (thyme, parsley, or sage)
Instructions
1. Pour turkey drippings into a fat separator and let the fat rise. If not using drippings, melt 1/4 cup butter in a medium saucepan over medium heat.
2. Whisk in 1/4 cup all-purpose flour and cook for 1–2 minutes, stirring constantly, until light golden and smooth.
3. Slowly whisk in 2 to 2 1/2 cups stock, continuing to stir to prevent lumps.
4. Add salt, pepper, and optional garlic powder, onion powder, and herbs.
5. Simmer for 5–7 minutes, stirring occasionally, until the gravy thickens to your desired consistency.
6. Optional: strain through a fine mesh sieve for extra smoothness.
7. Serve hot over turkey, potatoes, stuffing, or biscuits.
Notes
If using cornstarch instead of flour, mix 2 tablespoons with cold stock to create a slurry before adding to the pan.
Use freshly ground black pepper for deeper flavor.
You can prepare this gravy 2–3 days ahead and reheat on the stovetop with a splash of stock if thickened.
