Ingredients
2 boneless skinless chicken breasts
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup freshly grated parmesan cheese (plus more for sauce)
2 tbsp butter (for frying)
1 tbsp olive oil
2 cups heavy cream
4 cloves garlic, minced
2 tbsp butter (for sauce)
1/4 cup chopped fresh parsley
Salt and pepper to taste
Instructions
- Slice chicken breasts horizontally and pound to even thickness. Season with salt and pepper.
- Dredge each piece in flour, dip in beaten eggs, then coat with a mix of breadcrumbs and parmesan.
- In a large skillet, melt 2 tbsp butter with olive oil over medium heat. Fry chicken until golden and crispy on both sides. Remove and set aside.
- In the same skillet, add 2 tbsp butter and minced garlic. Sauté until fragrant.
- Pour in heavy cream, bring to a simmer, and stir in parmesan. Let the sauce thicken slightly.
- Return chicken to skillet and coat with sauce. Garnish with parsley and serve hot.
