Description

Egg Fried Rice is the ultimate quick and satisfying meal. With tender scrambled eggs, colorful veggies, and savory rice tossed in soy sauce and sesame oil, it’s a complete dish you can whip up in under 30 minutes.


Ingredients

3 cups cooked white rice (preferably day-old, cold)

2 large eggs

1/2 cup frozen green peas

1/2 cup diced carrots

2 tablespoons soy sauce

1 teaspoon sesame oil

2 garlic cloves, minced

2 green onions, chopped

2 tablespoons cooking oil (vegetable or canola)


Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add eggs and scramble until just set. Remove and set aside.
  2. In the same pan, add remaining oil. Sauté minced garlic for 30 seconds until fragrant.
  3. Add diced carrots and cook for 2–3 minutes. Stir in green peas.
  4. Add cold rice, breaking it up with your spatula. Stir-fry for 4–5 minutes.
  5. Pour in soy sauce and sesame oil. Mix thoroughly.
  6. Return scrambled eggs to the pan and fold them into the rice.
  7. Sprinkle with chopped green onions just before serving.
