Egg Fried Rice is the ultimate quick and satisfying meal. With tender scrambled eggs, colorful veggies, and savory rice tossed in soy sauce and sesame oil, it’s a complete dish you can whip up in under 30 minutes.
Ingredients
3 cups cooked white rice (preferably day-old, cold)
2 large eggs
1/2 cup frozen green peas
1/2 cup diced carrots
2 tablespoons soy sauce
1 teaspoon sesame oil
2 garlic cloves, minced
2 green onions, chopped
2 tablespoons cooking oil (vegetable or canola)
Instructions
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add eggs and scramble until just set. Remove and set aside.
- In the same pan, add remaining oil. Sauté minced garlic for 30 seconds until fragrant.
- Add diced carrots and cook for 2–3 minutes. Stir in green peas.
- Add cold rice, breaking it up with your spatula. Stir-fry for 4–5 minutes.
- Pour in soy sauce and sesame oil. Mix thoroughly.
- Return scrambled eggs to the pan and fold them into the rice.
- Sprinkle with chopped green onions just before serving.
