Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg yolk
1/2 cup eggnog
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
Frosting
1/4 cup unsalted butter, softened
2 tablespoons eggnog
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar
Ground cinnamon or nutmeg, for dusting
Instructions
1. Cream the butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
2. Beat in the egg yolk, vanilla extract, and eggnog until smooth and combined.
3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
4. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
5. Chill the dough in the refrigerator for 30 minutes.
6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
7. Scoop dough onto prepared sheets and bake for 10–12 minutes or until edges are set.
8. Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
9. For the frosting, beat butter, eggnog, vanilla, and powdered sugar until smooth.
10. Frost each cooled cookie and dust with cinnamon or nutmeg.
Notes
For perfectly shaped cookies, use a cookie scoop and chill the dough thoroughly.
Make sure the cookies are completely cooled before frosting to prevent melting.
For an extra festive flair, sprinkle crushed candy canes or edible glitter on top.
