Ingredients
1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter, melted
4 large egg yolks
½ cup granulated sugar
2 tablespoons cornstarch
1 ½ cups eggnog
½ cup whole milk
1 teaspoon vanilla extract
¼ teaspoon ground nutmeg
½ cup caramel sauce (store-bought or homemade)
½ cup brown sugar (for shards)
2 tablespoons water (for shards)
Instructions
1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs and melted butter until the texture resembles wet sand. Press into the bottom and sides of a tart pan. Bake for 8–10 minutes until lightly golden. Let cool completely.
2. In a medium saucepan, whisk together egg yolks, sugar, cornstarch, and a pinch of salt. Slowly whisk in eggnog and whole milk. Cook over medium heat, stirring constantly, until the mixture thickens like pudding. Remove from heat and stir in vanilla extract and ground nutmeg.
3. Pour the warm custard into the cooled tart crust. Smooth the top and refrigerate for at least 4 hours or until fully set.
4. To make caramel shards, combine brown sugar and water in a clean saucepan. Heat over medium without stirring until the mixture turns a deep amber color. Pour onto a parchment-lined baking sheet and let it cool completely. Break into shards.
5. Before serving, garnish the tart with caramel shards and a generous drizzle of caramel sauce. Slice using a warm knife and serve chilled.
