Ingredients
6 large eggs, separated
3/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup cherry pie filling or cooked Morello cherries
1/4 cup dark chocolate shavings (optional)
10 to 12 maraschino cherries or fresh cherries, for topping
Instructions
1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
2. In a bowl, beat egg yolks and granulated sugar until pale and thick.
3. In another bowl, sift cocoa powder, flour, baking powder, and salt.
4. In a clean bowl, beat egg whites until stiff peaks form.
5. Gently fold the dry ingredients into the yolk mixture, then fold in whipped egg whites carefully.
6. Pour batter into pan and spread evenly. Bake for 10–12 minutes or until cake springs back.
7. Invert the cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment and roll cake in towel. Let cool.
8. Beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
9. Unroll the cake, spread whipped cream evenly, and spoon on cherry filling.
10. Re-roll cake (without towel), seam-side down.
11. Frost top with remaining whipped cream, garnish with chocolate shavings and cherries.
12. Chill for at least 1 hour before slicing and serving.
Notes
This cake is best served chilled for clean slices.
Rolling the sponge while warm helps prevent cracks.
